POUR-OVER

THIS RECIPE IS FOR POUR OVER USING A DRIP FILTER (WE USE HARIO V60 BREWERS) & GOOSENECK KETTLE. IT WILL MAKE ONE 10oz. CUP OF COFFEE.

STEP 1
PREPARE
Heat water to 97 C, set filter in dripper, rinse filter, this also preheats your brewer, and your cup. Medium grind 20g of coffee.

STEP 2
ADD COFFEE
Add the grounds into the dripper and give it a gentle tap to level the coffee bed. Place on scale & tare.
|
STEP 3
BEGIN & LET BLOOM (30secs)
Starting the timer, add 40g of water, wetting all the grounds from the centre out. Gently swirl the V60 a few times, then pause 30 seconds and enjoy the aroma, while the coffee blooms and releases gases.

STEP 4
FIRST POUR to ~150g 
At 30 seconds, evenly pour 150g of water in concentric circles, reaching the outer edges of the filter without pouring directly onto the paper. This will take the timer to approximately 1:10 min.

STEP 5
REST (20secs)
Let the coffee rest again until the water drips through the filter and you can see the ground coffee again. Timer should read approximately 1:30 min.

STEP 6
SECOND POUR to ~300g
Continue pouring water until you reach 300 grams taking your timer to 2:00-2:30 min.

STEP 7
REMOVE FILTER
Once the dripping slows remove the dripper and pour your cup.

AEROPRESS

THIS RECIPE IS FOR A TRADITIONAL AEROPRESS. IT SERVES AS A STARTING POINT FOR ALL ENTHUSIASTS, FROM HERE YOU CAN EXPERIMENT AND DIAL IN YOUR FAVOURITE ROAST OR STRENGTH

STEP 1
PREPARE
Set brewer in inverted position. Grind 18g med-coarse coffee.

STEP 2
ADD COFFEE & WATER
Start a timer. Add ground coffee into the AeroPress, add 30g water, aiming to wet all the coffee during the pour, give it a gentle swirl. Wait 30 secs.

STEP 3
SECOND POUR & STIR
At 30 secs, fill AeroPress up to the top and stir with stir stick (or spoon) 10 times.

STEP 4
WAIT 2 MINUTES

FLIP & PRESS
flip onto cup and gently press all the way

ENJOY

FRENCH PRESS

THIS RECIPE IS FOR YOUR 13.5OZ (400ML) PRESS COFFEE MAKER (ALSO KNOWN AS A 'PRESS POT’), IT WILL MAKE 1 MUG OF COFFEE.

STEP 1
PREPARE
Preheat your press with hot water, including the plunger, and your cup. Grind 2 heaping tablespoons or 15 grams of coffee. It should have the consistency of coarse salt.

STEP 2
ADD COFFEE
Add ground coffee into the press and give it a gentle shake to level the grounds.
|
STEP 3
ADD WATER
Starting the timer, add water, wetting all the grounds, until the press is half full. Pause 30secs and enjoy the aroma, while the coffee blooms and releases gases.

STEP 4
STIR
At 30 secs give the grounds a gentle stir with a spoon.
|
STEP 5
ADD MORE WATER
Evenly pour water to the top of the press and add the lid, gently resting the plunger on the grounds.

STEP 6
PLUNGE
When your timer reads 4:00, then slowly push the plunger all the way down.
|
STEP 7
POUR
Immediately pour the coffee to prevent over-extraction.

STEP 8
ENJOY
